Drinks Raspberry Extract is a great replacement for the traditional
"ANCHOR" or "BOBO" raspberry extract. It can be substituted directly
into your favorite recipes, or made up into a delightful (concentrated
) Raspberry cordial.
Raspberry extract comes in a 250 ml bottle, and is ideal for making
Mock Raspberry Jam, Mock Raspberry Tarts, or use in confectionery
making.
The product will keep after opening, and does not require refrigeration.

Recipes
Raspberry Cordial Concentrate.
Dissolve 1.6 kg. sugar in 1.5 litres of hot water. When cool, add 185mL
of Raspberry extract and bring up to 2 litres. Dilute to taste.
Recommended 1 part concentrate to 4 parts water.
Note: to use whole
bottle, dissolve 2.16 kg sugar, and make final volume 2.7
litres. Dilute to taste.
Mock
Raspberry Jam.
"My choice"
Ingredients: 8 lb ( 3.63 kg ) Pie Mellon ( or fruit of your choice )
1+ 1/2 x
500gm jars Raspberry Jam
7 lb ( 3.18 kg ) Sugar
185ml raspberry extract.
Method. Mince the seeded mellon,
let stand over night with 1/2 the sugar and 1/2
pint ( 280ml water.) Next day
boil for 1 hour, then add rest of sugar, Raspberry jam and 185 ml
cordial extract. Boil till liquid jells. Bottle and seal.
Or
"Tomato" Raspberry Jam
Simmer
2.75 kg peeled and chopped tomatoes for 30 minutes. Add 2.25 kg sugar,
boil for 30 minutes. Add 440g jar of raspberry jam or a 50g packet of
jam setter. Add 100ml of raspberry extract and boil rapidly for 20-30
minutes. Bottle and seal.
Nana's Raspberry Tart

Cup of currants
½
cup of water
½
cup of sugar
2
tablespoons raspberry cordial extract
(Preferably added when mixture cools )
Boil for 3-5 minutes and thicken with corn
flour
Pour
filling into a pastry flan
Decorate
with crème
